SHELLBACK is single origin from Sidama. Family farms in the Oromia zone. Grown at 2,000-2,200 meters. Natural sun drying at a local cooperative. The same way it's been done for centuries.

Natural processing means the whole coffee cherry is dried before the bean is removed. Slower. Harder. Adds complexity you can't fake with shortcuts. The berry and wine-like notes come from the coffee plant pulling flavor from the fruit during the drying process.
