SHELLBACK is single origin from Sidama. Family farms in the Oromia zone. Grown at 2,000-2,200 meters. Natural sun drying at a local cooperative. The same way it's been done for centuries.
Natural processing means the whole coffee cherry is dried before the bean is removed. Slower. Harder. Adds complexity you can't fake with shortcuts. The berry and wine-like notes come from the coffee plant pulling flavor from the fruit during the drying process.
This is what heirloom Sidamo varietals taste like when they're processed right and not roasted into charcoal.
Why Ethiopia matters: Coffee started here. The plants are wild heirloom varieties that don't exist anywhere else. This isn't a commodity crop farmed for maximum yield - it's grown on family farms by people who've been doing this for generations.
