Origin and roast notes

Origin: Sidama, Ethiopia.

Ethiopia is where coffee started. Not metaphorically - literally. The plants here are wild heirloom varieties that don't exist anywhere else. Sidama is one of the premier growing regions. High altitude. Perfect climate. Farmers who've been doing this for generations.

Full details

SHELLBACK is single origin from Sidama. Family farms in the Oromia zone. Grown at 2,000-2,200 meters. Natural sun drying at a local cooperative. The same way it's been done for centuries.

Natural processing means the whole coffee cherry is dried before the bean is removed. Slower. Harder. Adds complexity you can't fake with shortcuts. The berry and wine-like notes come from the coffee plant pulling flavor from the fruit during the drying process.

This is what heirloom Sidamo varietals taste like when they're processed right and not roasted into charcoal.

Why Ethiopia matters: Coffee started here. The plants are wild heirloom varieties that don't exist anywhere else. This isn't a commodity crop farmed for maximum yield - it's grown on family farms by people who've been doing this for generations.

Who this is for: Pour over drinkers. Single origin explorers. Anyone who wants to taste what coffee was before the world commercialized it.

Origin: Sidama, Ethiopia (2,000-2,200m elevation)
Process: Natural sun drying (traditional method)

Questions

Coffee questions

Which grind should I choose?
Choose the grind that matches your brewer. Whole bean gives you the most control if you grind at home.
Is this bitter?
Bitterness depends on roast level, grind, water temperature, and brew time. Use the taste profile and brew guidance above before choosing.
Is this acidic?
Check the roast level, origin, and flavor notes above. If you dislike brighter cups, avoid products described as fruity, citrusy, or light.
When is it roasted?
Roast and shipping timing can vary by product and fulfillment schedule. Check the product details and checkout information before ordering.
Is this a subscription?
One-time purchase is the default. Subscription options only appear if they are enabled on this product.
How long does shipping take?
Shipping timing is shown at checkout when available. Contact Bilge Brew if you need timing before placing an order.
Which roast should I start with?
Start with the product whose taste profile matches how you already drink coffee. If you usually add cream, a fuller-bodied roast is usually safer.
